Ingredients (6 servings)

  • 1 tablespoon vegetable oil
  • 2 medium chopped carrots
  • 1 small coarsely chopped onion
  • 2 minced garlic cloves
  • Half an of cup uncooked whole wheat orzo pasta
  • 1.5 cups of coarsely shredded rotisserie chicken
  • 6 cups of chicken broth
  • 6-ounce cups of frozen peas
  • 8 ounces or 10 cups of fresh baby spinach
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons lemon juice
  • Coarsely ground pepper (optional)

How to cook the meal?

1. Get a 6-quart pot and put some vegetable oil in it - now heat the pot on medium heat.

2. Put carrots, onion, and garlic in the pan. Cook them until the carrots are soft. It should take about 4-5 minutes.

3. Add the orzo, chicken, and broth to the pot - then turn up the heat until it boils.

4. Turn down the heat and cook without a lid for 5 minutes.

5. Add the peas, spinach, and dill, and heat everything until it starts boiling again.

6. Turn the heat down low - let it cook without a lid for 3-4 minutes, until the orzo is soft.

7. Add some lemon juice to make it even more flavorful. If you want, put pepper on top of each bowl.

Ingredients (6 servings)

  • 2-pound whole roasted chicken (you can use both skinless or skinned)
  • 11 cups or 1 1/4 pounds of lettuce
  • 1 cup of thin red pepper slices
  • 3 tablespoons of olive oil
  • 1.5 tablespoons of fresh lemon juice
  • 2 teaspoons of Worcestershire sauce
  • 2 teaspoons of Dijon mustard
  • ¼ teaspoon of sugar
  • Salt and black pepper
  • 1 crushed garlic clove
  • 1.5 cups plain croutons (optional)
  • ½ cup of Parmesan cheese grated

How to cook the meal?

1. To make the salad - take the chicken off the bones. Use two forks to pull it apart into small pieces until you have 3 cups of chicken.

2. Put the chicken, lettuce, and bell pepper in a big bowl together.

3. To prepare vinaigrette - mix olive oil, lemon juice, Worcestershire sauce, mustard, sugar, salt and pepper, and garlic.

4. Pour the vinaigrette over the salad ingredients.
